There’s nothing like the combination of seared, juicy chicken thighs and seasoned corn that pops in the mouth. This dish proves that you don’t need a complicated menu to enjoy a perfect meal – a mix of sweet, spicy, and fresh lemon that lifts everything up. Prepare skewers, heat up the grill, and let the aroma do its thing.
Ingredients:
For seasoning the skewers:
1 kg chicken thighs, cut into relatively large cubes
1 tbsp sweet paprika
3 tbsp silan
3 tbsp olive oil
1 tsp salt
1 tsp ground black pepper
1 tsp granulated garlic
Juice from half a lemon
For the corn:
2 cans of drained corn
1 finely chopped red onion
1 finely chopped red chili pepper
2 tbsp olive oil
1 tsp salt
1 tsp ground black pepper
3 tbsp chopped cilantro
For serving:
Sliced avocado, lemon
Preparation:
1. Mix the chicken thigh cubes in a bowl with all the seasoning ingredients and thread them tightly onto wooden skewers.
2. Grill the chicken skewers on a grill or lightly greased plancha until nicely charred and golden on all sides.
3. Place olive oil, onion, and chili pepper in a pot and sauté for 3 minutes. Add the corn and the rest of the ingredients and cook over low heat for about 10 minutes.
4. Serve on a plate with corn, avocado slices, and lemon.
